When prepared the right way mashed cauliflower has a similar texture to regular mashed potatoes with a sweet, buttery taste. Add a little garlic and garnish with green onions and they taste even better!<\/p>\n<p>I happen to love potatoes, but most of us are getting way too many starchy white foods in our diet (<a href=\"https:\/\/wellnessmama.com\/recipes\/sweet-potato-fries\/\">fries anyone?<\/a>). This cauliflower mashed potatoes recipe (or \u201cfauxtatoes\u201d as I like to call it) is a great side dish for <a href=\"https:\/\/wellnessmama.com\/recipes\/thanksgiving-menu\/\">Christmas or other holidays<\/a>. We also like it for a healthy family dinner any night of the week. They\u2019re naturally gluten-free, low-carb, and keto.<\/p>\n<h2 class=\"wp-block-heading\" id=\"h-why-eat-cauliflower-potatoes-instead\">Why Eat Cauliflower \u201cPotatoes\u201d Instead?<\/h2>\n<p>Potato has some nutritional benefits and a baked potato beats processed Frankenstein \u201cfoods\u201d every time. Still, it can\u2019t top cauliflower from a health perspective.<\/p>\n<p>Here\u2019s why cauliflower rules:<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>They\u2019re Low Carb<\/strong> \u2013 A small potato has over 20 grams of carbs. Cauliflower, in comparison? A mere 5 grams. We need carbohydrates for energy, but too many<a href=\"https:\/\/wellnessmama.com\/health\/carbohydrates-guide\/\"> can work against us<\/a>. These keto \u201cpotatoes\u201d protect blood sugar levels and <a href=\"https:\/\/wellnessmama.com\/health\/reverse-diabetes-naturally\/\">prevent insulin spikes<\/a> that take a toll on health.<\/li>\n<li><strong>Fewer Pesticides<\/strong> \u2013 Potatoes rank high on the list of foods <a href=\"https:\/\/www.ewg.org\/foodnews\/summary.php\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">heavily sprayed with pesticides<\/a>. In fairness, non-organic cauliflower is on the list as well but ranks much lower (better). When organic isn\u2019t available, cauliflower is a better choice.<\/li>\n<li><strong>Balanced Protein and Fiber <\/strong>\u2013 A white potato appears to win this one, with a few tenths of a gram more protein than cauliflower and about the same amount of fiber (if you eat the skin). On the other hand, cauliflower does offer a more balanced <a href=\"https:\/\/wellnessmama.com\/health\/healthy-protein-sources\/\">amino acid profile<\/a>.<\/li>\n<li><strong>Nutrient Dense<\/strong> \u2013 It\u2019s true potatoes pack a lot of <a href=\"https:\/\/wellnessmama.com\/go\/vitaminc\/\">vitamin C<\/a> and a good amount of B6, potassium, and iron. Still, just a cup of cauliflower has almost 30 mg more vitamin C than a potato, comparable levels of B6 and folate, and an extra dose of vitamin K. To give potatoes their due, they are higher in potassium than cauliflower \u2026 again, only if you eat the skin.<\/li>\n<\/ul>\n<p>So how to win your family over to this better-for-you mashed cauli-potato?<\/p>\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-the-best-cauliflower-mashed-potatoes-kids-will-eat\">How to Make the Best Cauliflower Mashed Potatoes (Kids Will Eat!)<\/h2>\n<p>This is one substitute I think actually tastes better than the original! A friend made these for her husband and he even didn\u2019t realize it was cauliflower. Veggies for the win! If it\u2019s your first time transforming cauliflower into a \u201cpotato\u201d side dish,\u201d adding cheese and extra flavor turns them into something delicious.<\/p>\n<p>Most kids won\u2019t flinch at the difference, and you can rest happy knowing you are squeezing in extra nutrients. Top with melted cheese and even the most <a href=\"https:\/\/wellnessmama.com\/health\/guide-to-feeding-healthy-kids\/\">adamant veggie haters<\/a> will give it a try. It also tastes delicious served with this <a href=\"https:\/\/wellnessmama.com\/recipes\/marry-me-chicken\/\">Marry Me Chicken dish.<\/a> Incidentally, we love to use cauliflower to make<a href=\"https:\/\/wellnessmama.com\/recipes\/vegetable-fried-rice\/\"> Paleo \u201crice\u201d<\/a> too.<\/p>\n<p>With regular mashed potatoes you can use a food processor or potato masher. Since cauliflower isn\u2019t starchy it needs blended for a creamier texture.<\/p>\n<h3 class=\"wp-block-heading\" id=\"h-flavor-options\">Flavor Options<\/h3>\n<p>Most of the time I use garlic powder to season my cauliflower potatoes. You can also use fresh, minced garlic cloves. To really ramp up the flavor try roasted garlic instead! Or simply saute chopped garlic in olive oil over low heat until fragrant.<\/p>\n<p>For creaminess, I add Parmesan cheese and cream cheese or sour cream. If you\u2019re suspicious about \u201cflavored\u201d coconut oil\u00a0<a id=\"15930\" href=\"https:\/\/www.nutiva.com\/blogs\/blog\/what-is-organic-buttery-flavor\" target=\"_blank\" rel=\"noopener\">here\u2019s one explanation.<\/a>)<\/p>\n<h3 class=\"wp-block-heading\" id=\"h-how-to-make-mashed-cauliflower-potatoes-in-the-instant-pot\">How to Make Mashed Cauliflower Potatoes in the Instant Pot<\/h3>\n<p>When I first posted this recipe I got a few questions about why I boil the cauliflower instead of steaming to preserve nutrients. I get the best texture results preparing the cauliflower this way, but as long as you start with tender (but not overcooked and mushy) cauliflower, pretty much any cooking method will work. (I take it back \u2026 <a id=\"15931\" href=\"https:\/\/wellnessmama.com\/health\/microwave\/\">no microwaving<\/a>!)<\/p>\n<p>The Instant Pot is a great solution to this debate and actually <a id=\"15932\" href=\"https:\/\/wellnessmama.com\/natural-home\/pressure-cooker-nutrients\/\">does a great job of preserving nutrients<\/a>. If you\u2019re new to it,\u00a0<a id=\"15933\" href=\"https:\/\/wellnessmama.com\/natural-home\/instant-pot-review\/\">here\u2019s where I weigh in<\/a> on my favorite Instant Pot model and cooking tips!<\/p>\n<p><strong>Option for Instant Pot:<\/strong><\/p>\n<ol class=\"wp-block-list\">\n<li>Wash and quarter cauliflower, removing leaves and stem.<\/li>\n<li>Add steamer\/trivet basket to Instant Pot along with 1 cup water.<\/li>\n<li>Add cauliflower pieces.<\/li>\n<li>Set to manual high pressure for 4 minutes.<\/li>\n<li>Manually vent\/release pressure.<\/li>\n<li>Open, drain, and remove inner basket.<\/li>\n<li>Gently squeeze any remaining liquid out of the cauliflower and return to the pot.<\/li>\n<li>Add other ingredients and whip until creamy!<\/li>\n<\/ol>\n<p><strong>Will you try this mashed cauliflower recipe instead of mashed potatoes?
