On top of the chromium portion of the steel that makes these Astercook knives stainless steel, the set I received also has some type of coating covering all but the cutting edge that gives these an extra, extra layer of protection because it works as a physical barrier to the various elements in the kitchen that can be damaging to the chromium\/chromium oxide itself, leaving the cutting edge the only exposed portion of the knife.
